Figs for lunch.
I met my friend Leah out at the NC Farmer’s Market the other day for a quick break in the middle of the day, and we marveled over the beautiful colors of fruits and vegetables, fresh flowers, herbs, all kinds of goodness. We found a vendor who was selling figs, and I began to go on and on about figs, and how beautiful and wonderful they taste. I ended up having to rush off to a lunch engagement, but later on that week, Leah surprised me during our visit to the pool…with nothing other than figs! I was so excited that I ate most of them poolside, but I did make this yummy fig sandwich later in the day.
I had to get a bit creative and use what I had around, so I covered the figs with a bit of parmesan cheese, some greek yogurt, and then drizzled my concoction with honey. Baked in the oven for a few minutes, my sandwich turned out to be amazing!
